Roasted Fall Vegetables with Bacon
I’m all about incorporating seasonal fruits and vegetables into our meals. Not only is it fresh, it’s also very cost effective to buy seasonal foods.
I also love one pan meals - hello easy clean up! And that’s exactly what this roasted fall vegetable medley is. I’m also a BIG fan of mixing sweet and savoury flavours so I added bacon and chopped up dates to my sheet pan.
Here is what’s on my sheet pan (everything is to taste):
I added approximately 1 tsp of olive oil and a pinch of black pepper to the vegetables because the bacon grease adds a lot of flavour everything is mixed together. If you don’t add bacon, make sure your vegetables are lightly coated with olive oil.
Put the vegetables in the oven at 400 degrees for approximately 30-40minutes, gently mixing a few times throughout.
Additions/Substitutions:
• Add quinoa
• Add more of your favourite vegetables like potatoes, sweet potato or asparagus
• Substitute cranberry or raisins for the dates
So simple, so easy …and so delicious!
