Valentine’s Inspired Crepes
I was always intimidated with the idea of making crepes …until I actually made them and realized how easy it was and how I conveniently almost always had the ingredients on hand in my pantry. Crepes have now become not only special at breakfast but dinner as well.
Right in time for Valentine’s Day I decided to make our crepes festive by adding a dab of red food colouring to make them pink! Even the littlest hands couldn’t wait to dive in! The perfect way to celebrate love with family, friends!
Crepe Recipe:
2 eggs (beaten)
1 cup water
1/2 cup milk
2 Tbsp butter (melted)
2 Tbsp vanilla extract
1/3 cup granulated sugar
1 cup all purpose flour
In a bowl work together eggs, water, butter, milk and vanilla. Add sugar and mix. Coat small skillet in butter or cooking spray and keep on low-medium heat. Add flour and whisk together until smooth. Use a small measuring cup to pour a thin layer in skillet and gently flip when ready.
How I like to Serve it:
I like to serve crepes in a “do it yourself” buffet style. I place the crepes and toppings on a cooking sheet, topped with parchment paper for easy clean up. This easy style allows even our three year old to get creative with his crepe.
Our favourite toppings are: berries, bananas, chocolate sauce or Nutella, and whipped cream. Recently I added my own blueberry jam and lemon cream cheese spread - delicious! See recipe below.
Blueberry Jam
2 cups fresh blueberries
1/2 cup sugar
1/2 lemon squeezed
4 Tbsp water (divided)
3 tsp cornstarch
Add blueberries, sugar and 1/2 of the water to a small pot. When the pot begins to boil add the rest of the water and cornstarch. Watch closely and stir often. Add more water if necessary.
Lemon Cream Cheese
4 oz cream cheese.
1/2 lemon squeezed (more depending how much lemon flavour you’d like)
3-4 Tbsp powdered sugar
In a bowl mix all ingredients together, serve cool but do not keep it in the fridge too long before serving, otherwise it will be too hard to spread.
